1 1/2 cups of gluten-free flour (brown rice)
1 heaping teaspoon cinnamon
1 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
4 packets stevia
1/2 heaping cup of walnuts
14 baby rainbow carrots
1/2 cup avocado oil
1/3 cup honey
1/2 cup vegan eggs
Preheat oven to 350 degrees and grease a cake pan with butter or oil. Mix all dry ingredients first. Next, blend all wet ingredients, with the bananas and carrots, in a blender till creamy. Mix well, into the dry ingredients with a fork. Fold-in the walnuts and stir gently. Place in your greased cake pan and bake for 20-25 minutes. Pairs well with dairy-free yogurt or ice cream, nut-milk or coffee, or just by itself!
***ALL recipes are gluten-free, dairy-free, and low-sugar. Great for Whole30, Paleo, Keto, and some Vegetarian diets. Any dish that has meat can be substituted for the vegan meatless alternative.
