16 gluten-free crackers (simple truth rice crackers)
1/4 cup pizza or pasta sauce
1/4 cup shredded dairy-free cheese
5-6 black olives cut in thirds
Handful of chopped spinach
1/3 cup Shredded Rotisserie Chicken
Assemble crackers on microwave safe plate. Spoon out pasta sauce and spread on each cracker. Sprinkle shredded cheese. Arrange 1 olive slice per cracker. Microwave for 45 seconds. Top each cracker with shredded chicken and sprinkle chopped spinach!
***ALL recipes are gluten-free, dairy-free, and low-sugar. Great for Whole30, Paleo, Keto, and some Vegetarian diets. Any dish that has meat can be substituted for the vegan meatless alternative.
